Easy Healthy Noodles and Vegetables

Prepare about two cups of thinly sliced or small pieces of vegetable, such as green peas or pea pods, carrots, celery, broccoli, spinach, cauliflower and set aside. Thinly slice 1-2 green onions and a tomato in two large soup bowls. Prepare a package of ramen noodles as directed, but cook noodles for only two minutes, then add the vegetables you have set aside along with the seasoning and cook for one more minute. Remove from heat and set for another minute then ladle into the two bowls with tomatoes and onions in them. You can add sliced chicken or pork if desired, or add a few shrimp with the vegetables, or serve this as a side dish with a small serving of meat if someone needs meat with their meal. To reduce sodium, use only half of the seasoning packet.
